Chocolate desert brownie bars

Scrumptious Pumpkin Pie Squares


Crust:

  • 1 cup flour

  • 1/2 cup oatmeal

  • 1/2 cup brown sugar

  • 1/2 cup butter, softened

Mix ingredients until crumbly on a slow speed of mixer. Press into a greased 9x13 baking dish. Bake at 350°F for 15 minutes.


Filling:

  • 2 eggs

  • 1 can (16 oz.) pumpkin

  • 1 can (13 1/2 oz.) evaporated milk.

  • 3/4 cup sugar (you can add 1/2 cup brown sugar as part of the sugar)

  • 1/2 tsp. salt

  • 1 tsp. pumpkin pie spice

  • 1/2 tsp. ginger

  • 1 tsp. cinnamon

  • 1 tsp. cardamon

  • 1/4 tsp. cloves

Mix all ingredients together, then pour onto the baked crust. Continue to bake for 20 minutes at 350°F.


Topping:

  • 1 cup chopped nuts (pecans or walnuts)

  • 1 cup brown sugar

  • 1/4 cup butter, softened

Combine the topping ingredients and sprinkle over the pumpkin filling. Continue to bake for 15 to 20 minutes at 350°F, until the filling is set. Cool, serve with whipped cream, and cut into squares. Refrigerate leftovers. A family holiday favorite. Very rich… enjoy!



Gooey S’more Brownie Dessert Bars


Ingredients:

  • 1 cup butter, melted

  • 1 cup chocolate chips

  • 1 cup brown sugar

  • 12 tablespoons unsweetened cocoa powder

  • 2 extra-large eggs, slightly beaten

  • 1 1/2 teaspoons B & V (Butter/Vanilla Powder, available at Confectionary Chalet)

  • 2 teaspoons vanilla extract

  • 1 1/4 cups flour

  • 1/8 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/2 cup ground semi-sweet chocolate chips or mini chips

  • 6 graham crackers, broken into small 1/2” – 1” pieces.

  • 8 ounces dark chocolate bars, broken into small pieces (or semi-sweet or dark chocolate chips, slightly ground)

  • 1 1/2 cups mini marshmallows

Directions:

1. Preheat oven to 350°F. Prepare a 9x13 baking pan by lining it with foil and greasing it.

2. In a medium bowl, break graham crackers into 1-1/2-inch pieces and toss with mini marshmallows and dark chocolate. Set aside.

3. In a microwave-safe mixing bowl, melt butter. Add chocolate chips and mix until melted. Add brown sugar and cocoa powder to the butter and chocolate mixture, mixing until well blended.

4. Add eggs and mix well. Then add flour, B&V, vanilla, baking powder, baking soda, and ground chocolate chips. Mix until blended.

5. Place batter in the prepared baking pan and bake for 15 minutes in the preheated oven.

6. Remove from oven and sprinkle the S’more goodies evenly over the top. Bake for an additional 15-20 minutes or until a toothpick inserted in the center comes out clean. Be careful not to overbake.

7. Allow brownies to cool before cutting into squares. Enjoy!
